The mill process always happen in the same day of the harvest directly with our machinery consisting of the following units: deleafer, washing machine, crusher, kneader group, decanter. The phases of the process are: 1-removal of the leaves, 2-washing of the olives, 3-crushing of the olives, 4-kneading of the olive paste, 5-extraction of the oil, 6-filtering of the oil. The most delicate phases of the whole process are steps 4 and 5, therefore on the kneader group we have developed a sophisticate sensors system that allows us to have a rigid control of the paste’s temperature and to control and modify the gas of the atmosphere inside the tank. The decanter is a centrifugal ‘2 phases’ type at 3600 rpm and the oil flows directly and does not contain impurity nor vegetation water.
