Gustative and olfactive characteristics

There are many characteristics of taste and smell that help define the flavor and uniqueness of an olive oil. The three aspects that represent the pleasant qualities typical of each extra virgin olive oil are Fruity, Bitter and Pungent.

Fruity:Aroma reminiscent of olive oil healthy, fresh and picked at the right degree of ripeness.
Bitter:Typical taste of the extra virgin olive oil obtained from green olives or just veraison.
Pungent:Stinging sensation characteristic of extra virgin olive oil fresh and young.
